Spicy Sautéed Mushrooms Recipe

I love mushrooms for their meaty, hearty flavor—and because they are nutritional powerhouses. These high-fiber fungi are low in calories, but rich in energizing B vitamins. Studies also suggest that mushrooms may ward off certain types of cancer.

This easy weeknight recipe gets a kick from chili powder and cayenne pepper. Lemon and fresh herbs make it taste bright. Make it tonight for your family!

Spicy Sautéed Mushrooms

1 T. coconut oil
3 c. mushrooms, sliced
salt and pepper
Juice of ½ a lemon
2 cloves garlic, minced
1 tsp. red pepper flakes
1/2 tsp. oregano
1 T. fresh parsley
1/2 tsp. fresh thyme
pinch chili powder
1/4 tsp. cayenne pepper

Melt coconut oil in a pan over medium-high heat. Add mushrooms, sprinkle with salt and pepper and sauté for 8 to 10 minutes or until tender and browned, stirring occasionally. Add splash of water and lemon juice and let cook for a minute or so. Add the garlic, pepper, and herbs. Cook for 2 to 3 minutes, until garlic becomes fragrant. Add chili powder, squeeze of lemon and cayenne pepper. Cook for an additional 1 to 2 minutes. Remove from heat and add salt and pepper to taste.
