Raw Carrot Salad Recipe


Sometimes the most delicious dishes are the simplest ones.

On busy days, one of my go-to recipes is a side of raw carrots (sweet and crisp!) infused with aromatic spices and garlic—and a little bit of heat. It’s great year-round.

Raw Carrot Salad
2 carrots, finely grated
2 T. fresh parsley, chopped
1 clove of garlic, minced
1 tsp. olive oil
Juice of 1/2 lemon
1/4 tsp. curry powder
1/4 tsp. cumin
Salt and pepper to taste
Dash of cayenne powder

Combine all ingredients in a large bowl and let marinate in fridge for an hour.
