Grilled Rack of Lamb
1 rack of lamb
lamb rub or spice rub of choice (our favorite is Rub With Love Bengal Masala Rub by Thomas Douglas)
Heat grill to low-medium.
Let meat sit at room temperature for 30 minutes. Drizzle olive oil on lamb; pat with lamb spice rub. Let sit another 15 minutes.
Place lamb on grill. Turn once, cooking for 8 to 10 minutes on each side. When a meat thermometer reaches 130 degrees at the thickest part, it is medium-rare and ready.
Remove from heat; let sit for 5 minutes. Cut meat across the grain, slicing between every second bone. Serve immediately.
