You might have guessed that I am a huge fan of kefir. And guess what? My whole family loves it, too!
Coconut kefir pudding was one of the first foods I made for Ava. Since it’s a natural probiotic, it keeps digestion in check, helps build healthy gut flora and wards off bad bacteria.
You can use any fruit to flavor the pudding. (I use blueberries because Ava loves it!) It’s a delicious treat for the whole family!
Coconut Kefir Pudding
1 bag of frozen coconut
1 1/2 c. water
1 packet kefir starter
1/4 c. CocoKefir (optional)
fresh fruit (optional)
Defrost coconut meat in cold water. Place in blender. Add 1 c. CocoKeifer (or water) and slowly blend. Add 1/4 c. water (adjust to get pudding-like consistency). Add fruit. Blend in another 1/4 c. water. Add kefir starter and blend on low. Pour mixture into an airtight jar, making sure liquid has enough room to rise. Let ferment at room temperature for 24 hours. Place in fridge.
